2 sm zucchini -- shredded
about 1 1/2 cup
1 c nonfat cottage cheese
2 tbsps chopped cilantro
2 tbsps lemon juice
1/4 tsp pepper
1/4 tsp chopped green onions
1 clove garlic -- chopped
Place 3/4 cup of the zucchini and remaining ingredients in food
processor. Process
until smooth. Remove and stir in remaining zucchini. Cover and chill 4
hours. Serve
with veggies, crackers or chips.
