1/2 c blue cheese
1/2 t kosher salt
1/4 t white pepper
heat butter in a saucepan, over a medium flame
stir in flour until well blended
whisk in milk, heat and stir until thickened
remove from heat
stir in remaining ingredients-mix well
serve warm or at room temperature, over grilled meat
