                              RED ONION RELISH

    3       lg           Tomato
    1       lg           Bell pepper, green
      1/2   lg           Onion, red
                         Cider vinegar
                         Salt
                         Pepper
 
   Peel and seed tomato and cut into 1/8-inch dice.  Seed
   green pepper and cut into 1/8-inch dice. Cut onion
   into 1/8-inch dice. Combine tomato, pepper and onion
   in bowl. Add vinegar just to cover and salt and pepper
   to taste. Chill. (Can be prepared 1 day ahead.)
   
   A few hours before serving, drain well. Serve chilled
   or at room temperature.
