Spinach Quiche

2 Pkg. frozen chopped spinach -- (10 oz.)
1/4 C. butter or oleo
1 Small onion -- chopped
4 eggs
1/2 C. biscuit mix
2 C. half and half
1/2 Tsp. basil
1/2 Tsp. salt
1/8 Tsp. ground nutmeg
1 Dash pepper
1 C. shredded Swiss cheese
1 Dash paprika
Pierce packages of spinach with a fork. Place on paper
plate, microwave each at High for 2 minutes. Drain, combine
butter and chopped onion in a 2 cup glass bowl. Microwave on
High for 2 minutes. Combine eggs, biscuit mix, half and half,
basil, salt, nutmeg and pepper in a blender jar. Process on
low speed for 3 minutes. Pour mixture into a 10-inch quiche
dish. Sprinkle shredded cheese over the cream mixture.
Combine onion and butter mixture with drained spinach. Add
spinach mixture to cream and cheese mixture. Garnish with
paprika.
Microwave quiche at Medium-High for 14 to 16 minutes.
Rotate dish 1/4 turn at 3 1/2 to 4 minutes intervals. Quiche
is done when a knife comes out clean when inserted in center.
Yields 8 to 10 servings.
