PIZZA RICE

1/4 c Olive oil
1 md Onion -- chopped
4 Garlic cloves -- minced
2 Tomatoes -- chopped
6 Mushrooms -- sliced
2 tb Parsley -- chopped
1/2 ts Oregano
1/2 ts Basil
2 c Quick Brown Rice
4 c Water
Salt and pepper to taste
1/2 c Parmesan cheese
1/4 c Olives, sliced
-- (green or black)
Saute' vegetables and seasonings in olive oil. Stir
rice and vegetables into a rectangular casserole dish,
and pour water on top. Bake at 400 F. for 45 minutes;
remove and sprinkle with cheese and olives; cover and
return to oven for an additional 10 minutes.
