Mashed Potato Salad 2

6 Medium to large potatoes
4 Tbsp. butter
salt and pepper to taste
3 Ribs celery -- chopped fine (3 to
4)
6 green onions and tops -- (6 to 8)
6 Medium sweet pickles -- chopped fine
5 hard-boiled eggs -- (5 to 6)
1 C. Miracle Whip salad dressing -- (1 to 2)
2 Tsp. prepared mustard
Peel potatoes and cut them up. Cook, covered with
water. When tender, mash thoroughly. Add salt, pepper, butter
and about 1 cup Miracle Whip salad dressing. Cream together
and beat until fluffy. Be sure to get all the lumps out. Add
celery, onions, sweet pickles and chopped hard-boiled eggs.
Add salad dressing if needed. Add mustard and mix everything
well. Place fresh garden lettuce around edge of bowl. Spoon
potato salad mixture in bowl.
