                             RED PEPPER POLENTA

    4      cups          water
    1      envelope      Good Seasons Roasted Garlic -- OR
                         Cheese Garlic Salad Dressing Mix
    1      cup           coarse ground yellow cornmeal
      1/2  cup           chopped roasted red pepper
      1/2  cup           shredded sharp cheddar cheese
 
 Bring water and salad dressing mix to boil in medium saucepan.
 
 Pour cornmeal into water in a slow and steady stream, stirring constantly.
 
 Cook on low heat 20-25 minutes or until polenta begins to pull away from
 sides of pan, stirring frequently.  Add red pepper and cheese; stir until
 cheese is melted.  Serve immediately or let cool and sauté or grill before
 serving.
 
 Prep Time:  10 minutes.  Cooking Time:  30 minutes.
