      1/2  cup           olive oil
      1/3  cup           freshly squeezed lime juice
      1/4  cup           chopped cilantro
        1  teaspoon      ground cumin
                         Salt
                         Freshly ground black pepper
        2  cups          cooked lima beans
        1  cup           cooked black beans
        1  cup           cooked red kidney beans
        1  medium        red bell pepper, cored, -- seeded and diced
        1  medium        yellow bell pepper, cored, -- seeded and diced
        1  cup           chopped red onion
        2  cups          cooked yellow or white sweet corn kernels
        2                jalapeno peppers, -- seeded and minced
                         Fresh cilantro sprigs
 
 
 In a large bowl, whisk together olive oil, lime juice, cilantro, cumin,
 salt and pepper. Add lima beans, black beans, red kidney beans, red and
 yellow bell peppers, onion, corn and jalapeno peppers. Toss gently. Chill
 until ready to serve. Serve garnished with cilantro sprigs.
