~ Diabetic coconut fruit cookies Recipe ~

1 1/2 c  flour
      1 ts baking powder
    1/4 ts Baking soda
    1/4 ts Salt
    1/3 c  Diet margarine
    1/3 c  Flaked coconut
      1    Egg
    1/2 c  Unsweetened fruit juice
      2 ts Orange or lemon peel; grated
           Sugar substitute equal to
           -1/3 c. sugar
 
  Preheat oven to 400 degrees.  Combine flour, baking powder, baking soda,
  and salt, cut in margarine until consistency of peas.  Stir in coconut add
  remaining ingredients all at once.  Stir with fork until dough holds
  together.
  Drop about 2 inches apart by teaspoons onto an ungreased cookie sheet.
