1 c Sugar
1/2 c White corn syrup
1 c Roasted salted peanuts
1 ts Butter
1 ts Vanilla extract
1 ts Baking soda
Would you like a great recipe for peanut brittle using the microwave?
I've never had it fail & I think its foolproof!
In 1 1/2 qt. bowl stir together sugar & syrup. Microwave on high 4 min.
Stir in peanuts. Microwave on high 3 to 5 min,until light brown. Add
butter & vanilla to syrup, blending well. Microwave at high 1 to 2 min
more. Peanuts will be slightly browned & syrup very hot. Add baking soda &
gently stir until light & foamy. Pour mixture onto lightly greased cookie
sheet. Let cool 1/2 to 1 hour. When cool, break into small pieces & store
in air tight container Makes about 1 pound Kathy Jimerson
