~ 7 grain oatmeal cake Recipe ~

       Title: 7 GRAIN OATMEAL CAKE

       Yield: 1 cake
  
            - CREAM TOGETHER:
       1 c  AM Canola Oil
       2 c  Maple syrup
   1 1/2 ts Vanilla
            - MIX TILL SMOOTH:
       2 c  AM Unbleached White Flour
     3/8 c  AM Soy Flour
     1/2 c  Cold water
     1/2 c  Soy milk
   1 1/2 ts Grated lemon rind
   1 1/2 ts Sea salt (optional)
       3    Egg whites
       2 ts Cinnamon
       2 ts Non-alum baking powder
            - MIX THE ABOVE 2 MIXTURES
            - TOGETHER AND ADD:
       1 c  Cooked AM 7 Grain Cereal
       5 c  AM rolled Oats
     1/2 c  Raisins (optional)
     1/2 c  Chopped nuts
  
   Mix well and fill oiled cake pan 3/4 full.  Bake 350 F. until light golden
   brown.  This is not a very sweet cake.  May be served with apple butter,
   honey, etc.
