3 C zucchini -- grated
1 1/2 C sugar
2/3 C applesauce
3 C flour
1/2 Tsp salt
2 Tsps baking powder
2 Tsps baking soda
1/3 C Cocoa -- Or Carob Powder,

3 Tsps Vanilla
1 tsp Coconut Extract -- (it has no fat)
Preheat oven at 350 deg F. Prepare a 8 x 15" baking pan with cooking
spray and
flour. In a mixing bowl, combine zucchini, sugar, applesauce, vanilla,
and
coconut extract. In another mixing bowl, combine flour, salt, baking
powder, baking soda and cocoa powder. Mix wet ingredients with dry
ingredients just until moistened. Spread batter in prepared pan. Bake for
25 minutes.
