Cheese Muffins

2 tablespoons butter or margarine -- divided
1/2 cup chopped onion
1 1/2 cups biscuit mix
1 cup shredded sharp process american cheese -- divided
1 large egg -- lightly beaten
1/2 cup milk
1 tablespoon sesame seeds -- toasted
* Melt 1 tablespoon butter in a skillet over medium-high heat; add onion and c
ook, stirring constantly, 3 minutes or until tender.
* Combine onion, biscuit mix, and 1/2 cup cheese in a large bowl. Combine egg
and milk; add to onion mixture, stirring just until moistened.
* Spoon into greased muffin pans, filling half-full. Sprinkle with remaining
1/2 cup cheese and sesame seeds; dot with remaining 1 tablespoon butter.
* Bake at 400F for 13 minutes or until golden. Remove from pans immediately a
nd serve warm.
