    2 1/2  cups          all-purpose flour
    3 1/8  teaspoons     baking powder
      1/3  teaspoon      salt
    1      cup           sugar
    2      tablespoons   salad oil
      3/4  cup           skim milk
      1/2  cup           Egg Beaters=AE 99% egg substitute
    1      large         ripe banana -- mashed
    1      cup           chopped cranberries
    1                    apple -- peeled and chopped
      1/3  cup           chopped walnuts
      1/4  cup           raisins
 
      Sift together the flour, baking soda, and salt; set aside.  Combine the
 sugar, oil, milk, egg beaters, and mashed bananas in a large bowl and mix
 well.  Stir in the flour mixture.  Fold in cranberries, apple, walnuts, and
 raisins.  Spoon into greased 9x5-inch loaf pan.  Bake at 350=B0F. for 60
  minutes.
 
 Optional topping:  Mix together confectioners sugar and skim milk to make a
 glaze; spread over cooled loaf.

 NOTES : FAT and CALORIES:  Substitute 2 Tablespoons unsweetended applesauce
 or nonfat plain yogurt, or pureed prunes for the oil.  Put together like
 muffins, stirring the liquid ingredients into the flour mixture very gently.
 Do not over mix.

 Decrease sugar to 3/4 cup. (saves 12 additional calories)
 
 If using glaze, substitute skim milk for cream.
 
 SODIUM:  Using low sodium baking powder will drop sodium to 63mg per
 unglazed slice.
